Vegan Flatties

Are you doing Veganuary? Here’s a fab recipe from our Veganuary Cookout - Spicy Vegan Flatties

We cooked on our 600mm stainless steel Woodee Fire Pit using kiln dried wood.

Serves 6

Ingredients

  • 100g Mexican spicy grains –pre-cooked we used a Whitworth’s Protein by Nature packet.

  • 100g courgette - grated

  • 50g carrot - grated

  • ½ medium red onion - chopped

  • 1 cloves garlic minced

  • 1 tbsp buckwheat flour

  • ½ tsp cumin

  • ½ tsp paprika

  • Salt and pepper to taste

  • Rapeseed oil

Let’s Cook

Squeeze out as much water as possible from the grated courgette, and place in a bowl with the carrot, finely chopped onion, spicy grains, garlic, flour, spices and seasoning. Mix well together until it starts to come together.

Place the cooking tray over the fire pit and allow to heat up. Add some oil and when hot place spoonfuls of the mixture onto the tray. (I like to use a pastry cutter to help shape the flattie)

Cook for 4-5 minutes or until golden brown before turning over and cook for a further 4-5 minutes.

Serve with some grilled cherry tomatoes and slices of grilled courgette, or tomato salsa. Enjoy!
