Woodee Mac-n-Cheese
On this week’s cookout, we made our delicious Woodee Mac-n-Cheese, which is the perfect comforting meal for this time of year.
Ingredients
- 1L whole milk
- 250g pasta
- 25g butter
- 100g cheddar cheese – grated
- 1 clove garlic – roughly chopped or crushed
- 1tspn English mustard
- 10g (2 tspn) cornflour
- Extra milk or vegetable stock
- Salt and pepper
- Chopped parsley
Let’s Cook
Ensure your fire is hot. We used charcoal from Birchwood Forestry. When you are ready to cook move the charcoal away from the centre to make room for the Dutch oven.
Pour the milk into the Dutch oven along with the garlic and bring almost to the boil. Add the pasta and stir well. Continue to stir as the pasta cooks – this will take about 20 minutes depending on the pasta you use. During this time if the liquid evaporates away too much add some milk or vegetable stock. If your fire pit is very hot, the milk may bubble over. In this case, simply lift the Dutch oven out of the fire (wear a glove) and allow to settle down. Whilst this is cooling, move the coals to the outside of the fire pit.
Grate the cheese into a bowl, add the cornflour and mix well together.
When the pasta is cooked, take off the heat and add the butter and mustard, stir until melted then add the grated cheese, stir and allow to melt. Season well and sprinkle over the chopped parsley before serving. Enjoy!
