The Woodee Rice Pudding Recipe
What you’ll need:
- 100g pudding rice
- 25g sugar
- 300ml Full fat milk
- Grated nutmeg
Method
Wash the rice and drain well. Butter 4 small Dutch oven’s, tip in the rice and sugar and stir through the milk, finely grate a little nutmeg over the top. Replace the lids and pop the ovens down into the fire pit, with the coals around. Be careful not to have it too hot, (around 140-160°c) Check the puddings halfway through, adding more milk if necessary. Cook for 30-40 mins or until the pudding wobbles ever so slightly when shaken, and the rice is cooked.
