The Woodee BBQ Marinade

This marinade is great for chicken wings and belly Pork.

What you’ll need

  • 2 tbspn HP Sauce 
  • 2 tbspn Tomato sauce
  • 2 tbspn Worcester sauce 
  • 1 tbspn White wine vinegar
  • 1 tbspn Brown sugar (Demerara sugar)
  • 1 clove garlic grated
  • 1cm Fresh ginger - grated
  • 1 chilli - chopped (optional)
  • Salt and pepper
  • Chicken Wings
  • Belly Pork strips cut in half
  • Kiln dried wood or charcoal could be used when cooking these chicken wingsand Belly Pork 

Let’s Cook

Place all these ingredients into a resalable plastic bag and then place in the prepared meat, seal the top and squish it all together so that all the meat get covered in the marinade. Leave in the fridge for a couple of hours or longer (up to 12) to take on the flavours.

Once the fire pit has been lit and the fire has died down a little, place the grill onto to heat through.

Chicken Wings

Place the chicken wings on the grill and allow to cook for 5 minutes before turning, cook on the other side for another 5 minutes, and then turn them more regularly to prevent them from getting too charred. They will take about 15-20 minutes to cook through.

Belly Pork

Place the belly pork pieces onto the hot grill turn them regularly to allow even browning, these will take a little longer than the chicken wings around 20-30 minutes all depending on how thick they are.
