Fresh Mango Relish

Ingredients

  • 1 small red onion, finely chopped
  • 1 large ripe mango, finely diced
  • A handful of cherry tomatoes, finely chopped
  • 1-2 red chilli, finely chopped
  • A few sprigs of mint, finely chopped
  • 1 tspn caster sugar
  • Juice of 1 lemon to taste

Let’s Cook

  1. In a large bowl put the onion, mango, tomatoes, chilli and mint and mix well together.
  2. Add sugar and lemon juice to taste.
  3. Chill before serving to allow the flavours to mingle.
