Fire Roasted Scallops
This recipe is a real showstopper and is so simple. Cooking the scallops directly on the fire creates some amazing flavours.

Ingredients
- 16 king scallops (8 shells, ask your fishmonger for the shells)
- 250g Bacon Lardons
- 30g Butter
- 1 Granny Smith Apple
Method
Preparation
Light pit 40 minutes before cooking.
Step 1
Prepare by placing a small amount of butter in each of the shells, lay 2 scallops on top of each one. Sprinkle each one with some of the apple match sticks and 4- 5 bacon lardons
Step 2
Place the scallops directly on the hot coals, allow to sizzle and cook for 2-3 minutes, carefully lift out one of the shells using tongs and turn the scallops over, (they should release easily from the shell, if not they aren’t ready to turn. Repeat the process with all of the shells and cook for a further 2-3 minutes.
Step 3
Remove the shells from the fire and allow to cool slightly. You can serve these directly out of the shells with a fresh side salad or remove the scallops and serve as desired.
