Chocolate and Marmalade Bread and Butter Pudding

This delicious take on the traditional bread and butter pudding is to die for and so simple to make. This will be a real crowd pleaser.

Ingredients:

  • 2 pain au chocolat, cut into cubes or you could use brioche
  • 2 eggs
  • 150ml milk
  • 2 tsp marmalade
  • 1 good tbsp caster sugar
  • Dark Chocolate - chips or chunks
  • Butter for greasing

Let’s Cook


Butter out 2 small Dutch ovens, then put a layer of the pain au chocolate in the bottom, spoon a little marmalade on top then add another layer of the bread, placing some extra chocolate chips and marmalade as you go.

In a jug whisk the eggs with the milk and sugar and pour over the bread allowing it to soak up all the liquid. Don’t over fill. Pop the lids on top.

Have your fire pit lit and when the coals have died down, pull them away from the centre so that you have enough room to put the large Dutch oven in the centre.

Pour in some water about a couple of centimetres deep (1/3 way up your mini Dutch ovens) and then place the 2 small ovens inside the larger one. Put the lid on and allow to cook for 15-20 minutes, depending on how hot your pit is.

When ready the pudding should be firm to the touch and the custard set but still a bit wobbly.

Carefully lift out from the water bath, and serve with some extra thick double cream. Enjoy!
