Carrot and Chickpea Salad
What you’ll need
- 500g Carrots – grated
- 200g tinned chickpeas – drained
- 2 spring onions – sliced
- Fresh parsley – chopped
- Salt and pepper
Dressing
- 3 tbspn Olive oil
- 1tbspn White wine vinegar
- 1 tspn whole grain mustard
- Pinch of sugar
- Salt and pepper
Let’s Cook
Place the grated carrot, drained chickpea’s and spring onions into a bowl, mix together well.
Place the dressing ingredients into a jam jar and give a good shake to combine, then pour this over the carrots, and toss together with the chopped parsley.
Season the salad with salt and pepper.
