Carrot and Chickpea Salad

What you’ll need

  • 500g Carrots – grated
  • 200g tinned chickpeas – drained
  • 2 spring onions – sliced
  • Fresh parsley – chopped
  • Salt and pepper


  • 3 tbspn Olive oil
  • 1tbspn White wine vinegar
  • 1 tspn whole grain mustard
  • Pinch of sugar
  • Salt and pepper

Let’s Cook

Place the grated carrot, drained chickpea’s and spring onions into a bowl, mix together well.

Place the dressing ingredients into a jam jar and give a good shake to combine, then pour this over the carrots, and toss together with the chopped parsley.

Season the salad with salt and pepper.
