Boxing Day Brunch - recipe from our Boxing Day Cookout Live!
This is a brilliant way to use up your Christmas Lunch leftovers, outdoors, cooked over fire. Great recipe as you can add anything in that you have leftover.
- Cooked Turkey - cubed
- Leftover vegetables
- Roast potatoes and parsnips
- Cauliflower cheese or leeks
- Sprouts – sliced
- Cabbage or broccoli
- Pigs in blankets
- Orange zest
- White wine, cider or turkey stock
- Parsley – chopped
- Salt and pepper
- Rapeseed oil
Place the cooking tray onto the fire pit and allow to heat up before adding some oil.
When hot add the potatoes and parsnips and fry for a couple of minutes before adding the cubes of turkey.
In the order listed add the cauliflower cheese, sprout, carrots, cabbage and stuffing and stir fry until hot and crunchy on the edges. If the mixture is looking a little dry add some turkey stock, cider or white wine, this will create steam and keep everything moist. Finely grate over some orange zest and season with salt and pepper.
On another part of the cooking tray heat up the pigs in blankets and fry an egg.
To serve, place into a bowl with the egg on top and garnish with chopped parsley. Enjoy!
