Fresh Prawn and Veggie Stir Fry
Our live cookout this weekend was a fantastic, fresh and healthy stir fry using delicious seasonal vegetables grown at Gwernyfed walled garden. Cooked outdoors over a wood fire on the fire pit lid, this is a simple recipe that you can enjoy at home.
Ingredients

400g raw king prawns

2 1/2 piece of fresh ginger - grated

2 cloves garlic - grated

300/400g green leaves - kale, cabbage, broccoli leaves etc.

2 carrots - cut into ribbons

4 spring onions - sliced

4 tbsp sweet chilli sauce

Juice of 1 lime

Splash chilli sauce

Handful coriander - chopped

Rapeseed butter and butter
-
Salt and pepper

Lime wedges to garnish
Let’s Cook
In a bowl mix together the chilli sauce, ginger, garlic and lime juice.
Place the cooking tray over the fire pit and allow it to heat up. Add some rapeseed oil and a nut of butter, when hot and sizzling tip in the prawns and stir fry for a couple of minutes until they just start to go pink in colour. Remove the prawns from the cooking tray, put into the chilli sauce marinade, stir to coat.
Allow the tray to heat up again, adding a little more oil and butter, add the green leaves and carrots and stir fry for a couple of minutes, adding a dash of water to create some steam through the leaves, toss in the prawn and all the marinade to stir to combine, season to taste. Finally story though some chopped coriander, when hot serve in a couple of bowls garnished with lime wedges.
